On the show Taskmaster, the Taskmaster house has a very ornate looking gable end, where the (and I've seen other shapes as well) top of the shaped wall extends past the roofline.

 

What would this detail be called? Additionally, how would one achieve this look in Chief?

More specifically it's Dutch Colonial. Very common in the Caribbean. It would be reasonably easy with poly line solids. If you need the properties provided by the wall use an attic wall behind or use an invisible wall and overlay it.
