Create tall cabinet to go under stairs - how do I change height on one side?

I want to put tall cabinets under the stairs but at the moment the are showing through the stair rail. I need to make the left hand side shorter than the right

Really depends on what you are trying to do, and what software you have.  Since you do not have a signature filled out we cannot tell. 

 

There are several methods and the ultimate answer is depending on what you are you trying to model for a cabinet manufacturer to build from or are you just trying to get a rendering for it?  Do you want the doors angled as well?  Many will place a full wall and then a doorway without jamb and casing and place a square cabinet in the location, or even several.  If you are looking for a true angled cabinet you will need to build some custom doors.  Check out this previous post.
