What is this S label on my garage foundation walls, How do I remove it?

In order to add a wall between the two roof planes, do i need to build on the attic floor and randomly place is until i am in the right spot, or is there a simpler way?

I am a beginner and stumbled upon a roof that I cant seem to get right. Just looking for tips. Here is the house I am trying to recreate and here is how far I have gotten
