Click "Explode CAD Block" on the bottom tool bar.

 

I don't think that will work for a 3D symbol though - just for a CAD symbol/block. As Dennis mentioned there is no direct way to modify the geometry of a 3D symbol within the Chief Architect program - though you can modify some of the symbol's attributes, eg the 2D block assigned, 2D fill, bounding box size, material assignments, name, etc.

I posted a suggestion some time ago to provide the ability to "explode" a symbol to it's constituent faces.  That would allow unwanted faces to be deleted as well as allowing faces to be moved, modified or extruded into new shapes.

 

The more people post this in the suggestions forum the more likely it would get done.

You can use the open symbol button to make changes to the symbol.  This tool lets you replace either the 2d or 3d.

 

You can place the symbol in a plan and then go into a camera view to delete surfaces and then make a new symbol out of it.  Sometimes I have even combined symbols and other objects to make new hybrid objects using this. 

 

Not sure if any of these will help but It's not clear what changes you want.
