Creating two story section on one side of a room. Help! :)

Hey All - I have an incredibly complicated house to work with that is built into the side of a hill and consists of one basement level, one attic level, and one main level that within it has three different levels. (Kitchen, dining, and living room on one level, entryway 21" higher than those, and bedrooms and baths 21" higher than those.) I've figured out how to make those levels work with two exceptions. First, I can't figure out how to make the roof work. Second (and more importantly), the kitchen has two different ceiling heights: one the main height and the other wide open to the roof, following the roof line in only one section. So hard to describe and even harder to draw. I've tried drawing gable walls and others and just can't make it work. Anyone have any ideas short of hiring an actual architect to draw these?

Sorry to make an example from your post, but honestly...  I sense you're frustrated, but settle down a second and try to look at your post from the eyes of a reader and potential helper.  How do you expect anyone to help you from what you've posted here? 
You talk about not being able to do the roof, the ceilings, etc and there's a single picture of one area... and more importantly no plan attached, along with no other information showing what the model needs to look like.  Also, please include your user information so we know what version of Chief you're using and perhaps some info about your computer.

Well... if your title question is the meat of your question, rather than everything you wrote in the post, then it looks like you might be able to use a room divider wall and uncheck flat ceiling above in the structure panel for the side with a vaulted ceiling.  I think for anything beyond that you'll need to supply a lot more info.
