Removing Balcony and Bay window to regular roof

Hi,

I am not sure what happened to my post earlier...it seems like it did not go through.  A customer wants to cut building costs by removing the second floor balcony and replacing the doors with regular windows.  That would require me redoing the roof. He also wants to remove the bay window and replace it with regular windows.  Is there any training videos out there showing me how to do this? I am so new. Any help would be appreciated.  I have attached a picture.
